Bhuna khichuri, also known as khichri in the Indian subcontinent, is a dish essentially of rice and lentils. There are an infinite varieties of khichuri. It is quite a popular dish in Bangladesh and is often eaten with fried eggplants or scrambled eggs or meat curry.

Ingredients:
Pulao rice (chinigura/basmati) : 1 cup
Dals (masoor, moong, bengal gram) : 1 cup
Green pea : ⅓ cup
Onion (chopped) : ½ cup
Ginger paste : 2 teaspoons
Garlic paste : 1 teaspoon
Red chili : 3 pieces
Red chili powder : ½ teaspoon
Turmeric powder : ½ teaspoon
Whole cumin : ½ teaspoon
Whole garam masala (cinnamon , cardamon) : 4 pieces
Cloves: 4 pieces
Bay leaf : 3 pieces
Oil : ½ cup
Ghee : 2 tablespoons
Salt : as per taste
Water
Additional (for garnish) : coriander leaves, green chilies, ring sliced onions
Instructions:
Wash the rice and dals together well and drain all the water out.
In a dry pan, lightly roast the dals till it becomes light brown.
Heat 1 tablespoon oil in another pan and saute green peas lightly.
Heat the remaining oil and fry the cumin, bay leaves, ginger paste, garlic paste, red chilies, garam masala and cloves and saute for a few seconds.
Add the drained rice and roasted dals. Saute for 2 minutes.
Add 4 cups of water, salt, turmeric powder, red chili powder, onion and the fried green peas and mix it well.
Cover the pan and cook on a medium heat for about 10-12 minutes.
Lower heat and cook for another 10-15 minutes.
Drizzle ghee and garnish with coriander leaves.
Serve hot with green chilies and ring sliced onions.
