Bheja fry is a popular dish which actually uses brains of goat, sheep or lamb cooked in a spicy masala. The dish is quite popular in Hyderabad and Mumbai. The dish is quite literally mind-blowing.

Ingredients:
Goat brain : 1 piece
Onion (large, chopped) : 1 piece
Tomato (chopped) : 1 piece
Green chili (slit) : 6 pieces
Cumin seeds : 1 teaspoon
Garlic (minced) : 6 cloves
Cumin powder : ½ teaspoon
Garam masala powder : ½ teaspoon
Red chili powder : 1 teaspoon
Coriander powder : ½ teaspoon
Ghee/oil
Salt : as per taste
Additional (for garnish) : coriander leaves, lime wedge, sliced gingers.
Instructions:
Wash the brain thoroughly and then boil it in water with a pinch of salt for 2–5 minutes.
Remove the brain from the water and carefully remove membrane or nerves.
Chop the brain into pieces.
Heat oil or ghee in a saucepan. Add the cumin seeds, let it splutter.
Now add garlic and green chillies , saute for few seconds.
Add the onions and fry.
As soon as it changes its colour , add tomatoes , salt , coriander powder , chilli powder .
Stir well and fry for about 7–8 minutes until oil/ghee separates ( put little water if required during the time of roasting the masala).
Add brain and shake the pan gently to mix the brain with the spice mixture, avoid stirring with a spoon.
Add cumin powder and garam masala powder and fry for few minutes.
Garnish with coriander leaves, sliced ginger and lime wedges.
Serve hot with rumali roti or naan or paratha.
