Nachos is a Mexican dish from northern Mexico that consists of heated tortilla chips or totopos covered with melted cheese, often served as a snack or appetizer. More elaborate versions of the dish add other ingredients, and may be substantial enough to serve as a main dish.

Ingredients:
For nachos -
Ground beef : 1 lb.
Tortilla chips : 1 bag (large)
Beans (refried) : 15 oz
Black beans (drained) : 15 oz
Cheddar cheese (shredded) : 2 cups
Monterey jack cheese (shredded) : 2 cups
Jalapeno (pickled) : ½ cup
Taco seasoning : 1 tablespoon
Onio (large, chopped) : 1 piece
Garlic clove (minced) : 2 pieces
Olive oil (extra virgin) : 1 tablespoon
Water : ¼ cup
Kosher salt : as per taste
For topping -
Avocado (diced) : 1 piece
Tomato (large, diced) : 1 piece
Green onion (thinly sliced) : ¼ cup
Cilantro leaves (chopped) : ¼ cup
Sour cream
Hot sauce
Instructions:
Preheat oven to 425 degrees Fahrenheit and line a large baking sheet with foil.
In a large skillet over medium heat, heat oil. Add onion and cook until soft.
Add ground beef and cook until no longer pink. Drain fat.
Add garlic and taco seasoning and season with kosher salt. Cook until meat is well browned and slightly crispy.
Add refried beans and water to skillet and stir until combined.
Put an oven safe dish over the baking sheet and keep the tortilla chips and top with beef-bean mixture, cheeses, black beans and pickled jalapeno.
Bake until cheeses are melted.
Scatter with tomato, avocado and green onions.
Drizzle with sour cream and hot sauce and devour.
