Malai Kofta Recipe

Malai kofta is a popular as well as most sought after vegetarian indian dish in restaurants. Malai means cream and kofta are fried dumpling balls. Usually they are made up of mashed potatoes, mix vegetables or paneer.

Ingredients: 


For kofta - 

  • All-purpose flour : 2 tablespoons

  • Potato (boiled) : 2 pieces

  • Paneer (grated) : 1 cup

  • Cashews (chopped) : 1 tablespoon

  • Almonds (chopped) : 1 tablespoon

  • Garam masala : ½ teaspoon

  • Oil 

  • Salt : as per taste


For puree - 

  • Tomato (chopped) : 2 pieces

  • Onion (chopped) : 1 piece

  • Ginger-garlic paste : 1 teaspoon

  • Turmeric powder : ½ teaspoon

  • Chilli powder : 1-2 teaspoon

  • Coriander powder : 1 teaspoon

  • Oil : 1 tablespoon


For kofta gravy - 

  • Cream (malai) : ¼ cup

  • Cashew (paste) : ¼ cup

  • Bay leaf : 1 piece

  • Cardamom : 2 pieces

  • Clove : 3 pieces

  • Cinnamon stick : 1 inch

  • Garam masala : ½ teaspoon

  • Dry fenugreek leaves (kasuri methi) : 1 tablespoon

  • Water : ¼ cup

  • Oil/butter : 2 teaspoons

  • Salt : as per taste


Instructions:


For kofta - 

  1. In a large mixing bowl, take grated paneer, boiled potatoes and mash them well. 

  2. Add salt, garam masala and chopped cashews and almonds.

  3. Combine everything well and make small lemon sized balls.

  4. Coat with flour to get a crispy coating.

  5. Deep fry the koftas on medium heat.

  6. Once the koftas turn golden brown, drain to a paper towel to absorb excess oil.


For puree - 

  1. In a large kadai, take 1 tablespoon of oil and saute chopped onions till they sweat.

  2. Add ginger-garlic paste. Saute till the raw smell of ginger-garlic disappears.

  3. Add chopped tomatoes and saute for a minute or two.

  4. Cook them covered for at least 15 minutes or till they are completely cooked.

  5. Add turmeric powder, chilli powder and coriander powder and fry the masala on medium flame. 

  6. Switch off the flame and allow the mixture to cool completely.

  7. Blend the mixture to a smooth puree adding required water.


For kofta curry - 

  1. In a large kadai, take 2 teaspoons of oil and fry bay leaf, cardamom, cloves and cinnamon stick till they turn fragrant.

  2. Add the blended puree prepared previously.

  3. Boil the paste for 3 minutes on medium flame and keep stirring continuously.

  4. Add cashew paste and give a good mix.

  5. Cover and cook for another 10 minutes.

  6. Now add garam masala, salt and some water. Adjust the consistency of gravy. Give a good mix and get to a boil.

  7. Add cream and cook for a minute.

  8. Finally add crushed kasuri methi.

  9. Place the koftas into a serving plate and pour the gravy over it.

  10. Enjoy malai kofta with hot garlic naan or chapati.
